The warm Sicilian sun and fresh night breezes across the island provide the perfect climate for growing Merlot grapes with bright fruit aromas and soft, mature tannins. Grapes for our Merlot come from two different areas. On the southeast part of the island near the shores of the Mediterranean Sea, sandy soil and a warm climate create grapes with great maturation, vibrant aromas and flavors, and velvety tannins. On the southwest part of the island close to the Valley of the Temples is a mountainous growing environment with heavy clay soil. Grapes mature slower here, resulting in deep color and extremely rich mouthfeel.

The grapes were harvested upon full maturation at the end of September. The wine was vinified using an average maceration time of 8 to 10 days in small stainless steel tanks in order to promote greater surface contact between the skin and the must, which increases the extraction of polyphenols substances at a temperature of 26-28°C. Upon separation of the juice and the solids, the wine was refined in large oak casks until the completion of malolactic fermentation. In order to retain the characteristic fruity flavors of the wine, it was refined in stainless steel tanks.
