Ecco Domani translates to ”Here’s tomorrow” in Italian, reflecting our forward-thinking approach and contemporary wine style. We choose our grapes from the regions where they grow best, which allows us to create authentically Italian wines with bright fruit flavors. Our Pinot Grigio is made with fruit from the celebrated regions of the Tre Venezie: Trentino-Alto Adige, Veneto and Friuli-Venezia Giulia.
Tasting notes
This wine has a clear, straw yellow color, with light golden reflections. A low concentration of mature grapes gives the wine tropical fruit notes that make the vintage truly unique. The wine possesses pleasant floral and tropical fruit aromas, and has a light, crisp, clean and refreshing flavor, with fruit character and refined elegance.
Wine maker notes
wine was made "in bianco" or "in the white", referring to the vinification process that transforms the blue-gray colored berries into delicate white wine. A soft pressing was employed to enhance flavor extraction while deriving minimal color from the skins. Fermentation was temperature controlled between 68-72°F. A selection of specific yeast was used for inoculation. To intensify the tropical characteristics of the wine, late harvest Pinot Grigio grapes were vinified and added. The wine was left to settle and was then cold stabilized, filtered and bottled under cold, sterile conditions
